Peel them properly without damaging the tip .Seperatly saute a chopped onion and garlic in olive oil , add vegetable stock , salt and pepper , bring to a boil , add carrots and leeks , coriander and basil fresh , boil the asparagus which have been cut in half , cook for 10 min low boil till asparagus are soft , remove tip half and use for garnishing your salad , and add milk to remaining stock , blend well and strain back into pot , add cream heavy , extra virgin olive oil , black pepper and check seasoning !
White asparagus are great served has a dish , not a siding as they have a great taste and a light sauce will compliment them well , egg mayonnaise , lemon herb vinaigrette , hollandaise or nutty butter , you can enjoy them hot or cold !
