Eggplant , mushrooms , pumpkin ,stringbeans ,onions,garlic,ginger,lemongrass ,red Chili ,all vegetables cut into same size , other ingredients use blender and make paste by adding oil to it
After sautéed the vegetables with paste in hot oil then add coconut milk , curry leaves , vegetable stock , and basil and coriander lightly chopped ! Cook for 3 to 4 minutes till vegetables are tender , Serve with steamed rice .
