Bordered by three seas and with roughly 5,000 miles of coastline, seafood plays the leading role in many of Italy's classic dishes. Italians know seafood pasta as "frutti di mare," which means "fruits of the sea." While the types of fish incorporated may vary from region to region, the basic premise of the dish is a bounty of seafood cooked in a light tomato sauce with fresh herbs and served over pasta or with some freshly baked Italian Bread ... What's nice with Italian food is its simplicity in maintaining the taste of the main ingredient in the dish my date with Italian food for my lunch the other day was so romantic and with a touch of sweetness ... I started of my date with a couple of dishes that just got my date into the yummy loving mood ...
Fresh baby spinach and roasted artichokes with garlic cream cheese and basil dip , gratinated with" Parmigiano Reggiano "
True Parmigiano-Reggiano cheese, or parmesan as it is known in many places, has a distinct salty flavor and hard texture. Produced since at least the 13th century in Italy, authentic Parmigiano-Reggiano cheese is made of pure cow’s milk, with few additives. Experts recommend pairing this grating or table cheese with robust red wines, fruit and honey or with any tomato-based dish.
The cheese is made with very specific rules, beginning with the diet of the cows used in production. The cows used may be fed only grass and hay, with any other food is forbidden. As a raw milk cheese, the quality of the milk is extremely important and therefore rigorously checked, to prevent the possibility of transmittable diseases. This cheese is produced in the Northern part of Italy ! Modena city ..

When you think Italian food the first thing that pops up in your mind is pasta pizza and the yummy gelato ice creams !! But the real Italian food starts with a visit to a Italian market !
Phillips, a former resident of Florence, explained the evolution of the market. Once a central distribution point for fresh foods, meats and fish, the market went into a decline when supermarkets came on the scene, and folks found easier parking and the squeamish didn't have to look at animal carcases.
Foreign foodies and immigrants eventually changed the atmosphere of the market. Poorer immigrants didn't have cars, and searched for the raw ingredients for their own cuisines, foreign foodies wanted access to the famed foods of Tuscany, especially ones that they couldn't find in their own markets, like boar roasts and cow stomachs.
Eventually the market adjusted, and these days you can taste, buy souvenirs, eat full meals or a sandwich, and even gawk at the fish. Fishmongers are used to visitors and seldom try to discourage tourists from photographing (that doesn't mean you shouldn't be courteous to people trying to make a living by actually selling fish to customers, of course).
Italian food is full of tradition and culture , just hang around at a market and look at the locals the way they get there favorite products and deal the price with hand gestures !
To best cook Italian food is to select a good quality product a and don't mix to many flavors on it, keep it simple to enjoy the product it self (ex grilled fish , just use salt pepper, virgin olive oil and lemon) Italian rely on the freshness of the product .
